Chardonnay Grape Variety

Technical characteristics :

Grape variety : 100% Chardonnay.
Amount Planted : 155 ha.
Yield : < 60 hl/ha.
Vineyard : : Plot selection.
Harvested at night to protect the flavors.
Close monitoring of the maturity and sensorial analysis of the berries.
Vinification : Harvested at night.
Peeling/pressing.
Juice extraction through direct pressure.
Selected yeast is added and fermentation temperatures are closely monitored.
Matures in vats.
Alcohol content : 13,5% Vol.

Organoleptic qualities :

Color : pretty yellow color with flashes of gold, very bright and shiny.
Nose : The initial bouquet reveals hints of white flowers and a touch of caramel.
It is complex and then allows you to smell scents of fruit (peach, pear) and butter.
Palate : Pleasant attack, full-bodied and round.
Nice flavor complexity dominated by tastes of white fruit.
Has a very long and persistant end.

Serve between 10 -12°C.

Serving suggestions : As a cocktail, with fish cooked in sauce or goat cheese.
