Chardonnay Grape Variety
matured in oak barrels

Technical characteristics :

Grape variety : 100% Chardonnay.
Amount Planted : 155 ha.
Yield : < 60 hl/ha.
Vineyard : Plot selection.
Harvested at night to protect the flavors.
Monitoring of maturity and sensorial analysis of the berries.
Vinification : Harvested at night.
Peeling/pressing.
Juice extraction through direct pressure.
Selected yeasts are added and fermentation temperatures are closely monitored.
Matures in French oak barrels.
Alcohol content : 13.5% Vol.

Organoleptic qualities :

Color : Golden and intense.
Nose : Complex and perfumed.
Floral scents which blend well with the other scents of the forest, vanilla and nutmeg.
Palate : Direct and pleasant attack.
Full-bodied and woody, there is a taste of ripe white fruit (pear) and you catch tastes of smoked and caramelized flavors at the end.

Serve between 10 - 12°C.

Serving suggestions : As a cocktail, with crustaceans in sauce (e.g. American style prawns).
