Merlot grape variety

Technical characteristics :

Grape variety : 100% Merlot.
Amount Planted : 92 ha.
Yield : < 50 hl/ha.
Vineyard : Plot selection.
Monitoring of maturity and sensorial analysis of berries.
Harvested at maturity.
Vinification : Traditional vinification methods through monitoring of fermentation temperatures.
Long fermentation period (4 weeks).
Matures in vats.
Alcohol content : 14% Vol.

Organoleptic qualities :

Color : Bright, shiny and clear flashes of ruby red.
Nose : Initial bouquet is very fruity, dominated by red fruit like strawberries or blackcurrants.
The nose then develops spicy scents of pepper and cloves.
Pleasant vegetal touch (green pepper).
Palate : Direct attack, round and mellow.
Fruity and persistant on the palate.
Tannic yet accommodating.
Nice structure.

Serve between 16 -18°C.

Serving suggestions : Red meat and cheese.
