Sauvignon Grape Variety

Technical characteristics :

Grape variety : 100% Sauvignon.
Amount Planted: 107 ha.
Yield : < 70 hl/ha.
Vineyard : Plot selection.
Harvested at night to protect the flavors.
Monitoring of maturity and sensorial analysis of the berries.
Vinification : : Harvested at night.
Peeling/pressing.
Juice extraction through direct pressure.
Selected yeast is added and fermentation temperatures are closely monitored.
Matures in vats.
Alcohol content : 12.5% Vol.

Organoleptic qualities :


Color : Bright and shiny pale yellow with flashes of green.
Nose : The initial bouquet gives off scents of citrus fruit like grapefruit as well as exotic fruit like mango. Then the nose reveals the characteristics and complexity of the grape variety dominated by a scent of wood
Palate : Dry white wine.
Direct attack with nice acidity.
Dominated by citrus fruit.
Persistant end.

Serve between 10 - 12°.

Serving suggestions : As a cocktail, with shellfish or other types of fish.
